Install the bundled vJoy program, which lets the GameCube controller speak to the PC. The GC adapter program will boot up, and you will need to click the “Start” button to enable it to work.

The game will still work on Switch 2 without an official update, but in terms of GameCube controller functionality, you’d probably have to use the original Switch’s adapter.
